Healthier Mexican Cooking

Maria Medina cooks a healthy meal for her family in their Rancho Cordova home, February 1, 2012. She was diagnosed with diabetes five years ago and has since been working to improve the diet of her family. This meal is inspired by her Mexican heritage, incorporating a cactus salsa on top of baked tilapia filets. On the side are whole pinto beans and a side salad topped with homemade salsa verde.
